5Line a baking tray with non-stick foil, parchment paper or silicone mat.
6Spread the batter thinly and evenly on the tray by wetting your hands and pressing out.
7Keep your hands wet at all times to prevent from sticking.
8Sprinkle za'atar powder and sesame seeds all over the top.
9Press gently with dry hands and bake in a preheated oven (180C/350F) for 15-20 minutes till golden brown all over the top.
10Cool completely and break into large pieces. Enjoy as is or with your favorite dips/soups/salads.
Chickpea flour aka garbanzo bean flour can be made at home by grinding garbanzo beans (kabuli chana) to a fine powder in a powerful grinder. Or you can use the readymade one.
