Grilled Sweet Potato with Teriyaki & Sesame

Ingredients

2 sweet potatoes

Cooking oil spray

Salt & pepper to taste

For the teriyaki sauce:

1/4 cup soy sauce

1/8 cup water

1 tablespoon rice vinegar

3 tablespoon raw sugar/brown sugar

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 teaspoon cornstarch, dissolved in 2 teaspoons water

To serve:

1 tablespoon white and black sesame seeds

2 spring onions, finely chopped

Directions

1Preheat oven to 180C/350F. Cut the sweet potato into 1/2" thick slices.

2Spray cooking oil on a baking sheet, arrange sweet potato slices, spray more cooking oil, sprinkle salt and pepper and roast them for about 60 minutes till browned and tender.

For the teriyaki sauce:

1Combine soy sauce, water, rice vinegar, sugar garlic and ginger in a saucepan.

2Heat the mixture till sugar is dissolved.

3Add in the cornstarch slurry, stir and simmer till sauce is thickened.

To serve:

1Arrange roasted sweet potatoes on a plate, drizzle teriyaki sauce all over, generously sprinkle with sesame seeds and spring onions. Enjoy!
