I don't like to eat chocolate desserts (yes, I'm weird like that), but I love eating chocolate with crunch and often crave for it. These are reminiscent of those nutty clusters wrapped in colored foil in pastry shops that my mum used to bring to America when I was in college. This one is with an added sprinkle of sea salt which is my favorite thing to go with chocolate.
Directions
1Melt 3/4th of the chocolate in a double boiler or in a microwave.
2Remove from heat and add in remaining 1/4th chocolate and stir till fully melted.
3Continue stirring till the chocolate reaches 28°C/82°F or the bottom of the bowl doesn't feel warm anymore.
4Add in the toasted nuts and stir well till all the nuts are coated with chocolate.
5Drop spoonfuls of the mixture on a Silpat or on parchment paper.
6Sprinkle sea salt and set aside to firm up.
7Refrigerate.
