Directions
1In an electric stand mixer or using electric beaters, whip the eggs till thick and pale.
2While the eggs are whipping, sift together plain flour, custard powder and baking powder at least 3 times.
3Once eggs are whipped, add in sugar a tablespoon at a time and continue whipping till all the sugar is dissolved.
4Now sift in the flour mixture a third at a time and gently fold in using a slotted metal spoon. Continue to do the same with the remaining 2/3rd amount of flour.
5Pour the batter into a large rectangular baking pan greased and lined with baking paper.
6Bake for 12-18 minutes in an oven preheated to 180ºC/350ºF or until the top is evenly golden and springs back when lightly touched.
7Let it cool for 5 minutes in the pan.
8Remove it onto a wire rack and let it cool completely before cutting/assembling.
