Directions
1Toss pumpkin and a handful of chopped thyme in 1/2 tbsp olive oil and spread on a baking sheet. Roast for 20 minutes at 220°C till browned and softened.
2Purée half of the roasted pumpkin to a smooth paste and set aside.
3Heat remaining 1 1/2 tbsp olive oil and fry the remaining thyme in it till crispy.
4Heat half of the butter in a pan, add in onions and cook till translucent but not browned at all.
5Add in the arborio rice and sauté till the rice is glossy and the edges start to become transparent.
6Add in white wine and stir continuously till evaporated fully.
7Now start to add in hot vegetable broth, a ladleful at a time and keep stirring the rice continuously. Once all the broth is absorbed, add in the next ladle and stir again. Keep doing this till all the broth is used up. In the end, the rice should be cooked to al dente and should look creamy.
8Turn off the heat and stir in the roasted pumpkin purée, remaining butter and parmesan.
9At time of serving, place the risotto in a shallow dish, top with cubes of roasted pumpkin and garnish with crispy thyme.
