Raw Papaya Salad

Ingredients

1 large raw papaya, peeled

1 large tomato, thinly sliced

3 spring onions, cut into 1" pieces

1/2 cup coriander, finely chopped

3 tablespoons peanut butter

3 tablespoons honey

1 teaspoon chili flakes

Salt, pepper and lime juice to taste

2 tablespoons crushed roasted peanuts

Directions

1Using a large grater or a spiralizer, grate the raw papaya.

2Mix in tomatoes, spring onion and coriander.

3In a microwave, melt together peanut butter and honey.

4Mix in chili flakes, salt, pepper and lime.

5Pour this dressing over the salad, toss and serve with a generous sprinkle of crushed peanuts.
