Salted Caramel Mocha Frappuccino Marshmallows

I am not a frequent Starbucks visitor but once in a blue moon when I do visit, I have to pick up a salted caramel mocha frap and hence the marshmallows today. So unlike the store-bought ones, these have gorgeous salted caramel oozing out of fluffy melty marshmallows bursting with coffee.
Directions
1Grease a metal pan or glass dish with butter. Combine water and coffee. Refrigerate to chill completely.
2Pour 1/4 cup coffee in a stand mixer. Sprinkle over gelatin or agar, stir and sit for 15 minutes to bloom.
3In the meanwhile, combine remaining 1/4 cup coffee, sugar, corn syrup/glucose syrup and salt in a saucepan. Bring to a rolling boil or to 115°C/240°F which is soft ball stage on a candy thermometer. Then turning the stand mixer on low speed with whisk attachment, pour the coffee syrup into the gelatin a thin stream being very careful. Turn up the speed to high and whisk for 8-10 minutes or until the mixture looks thick and glossy like marshmallow fluff. Add in cocoa powder and whisk to combine.
4Pour 3/4th of the mixture into the greased pan and spread quickly using a greased offset spatula. Then drizzle the salted caramel all over, pour remaining 1/4th marshmallow mixture and swirl around using a toothpick. Cover the pan with greased cling wrap pressing down gently, making sure to touch the plastic wrap to the surface of the marshmallow. Leave it out at room temperature for at least 6 hours (overnight preferred) to set completely.
5To cut: Dust a cutting board with a mix of icing sugar and cornstarch. Invert the marshmallow on it and dust the top with more icing sugar-cornstarch mixture. Dip a sharp knife in water and start cutting squares, dipping the knife after every cut. Roll the marshmallow squares in cocoa powder (not in picture) and store in an airtight container.
